The continuous pressure feature can be set to be any continuous controller number (0-127), or Aftertouch, or Pitchbend Up/Down. Mandala V3 includes a USB port which will provide a faster MIDI signal to your computer than a 5-pin MIDI cable, so the best approach would be to combine your V3 USB signals through a powered USB hub connected to your computer.

Are you referring to Mandala v1 (red rim and black standalone hardware brain)? Or are you referring to one of the USB-MIDI models (v2 purple rim or mk2.9 grey rim)?

You can’t run the old Virtual Brain as a plugin, but depending on what computer and OS you are using you can look into software audio routing tools like: Soundflower, Loopback, Blackhole, or ReWire to get VB audio into Ableton Live.
